Travel live! A culinary adventure with the 3-stars Michelin chef Jean-Georges

I’m very lucky that my job offers me opportunities to go to tasting at new restaurants that I wouldn’t intend to join the hype or fine dining places that I absolutely cannot afford. Today I have the honor to join the 3-stars Michelin Chef Jean-Georges at one of his restaurant in Singapore The Dempsey Cookhouse & Bar and trying their signature 7-courses.

I wouldn’t call myself a foodie but I certainly know about food after all the years eating around the world. I don’t usually write about food unless the experience created a whole new memory of taste to me. No offense(or probably those who get offended won’t be reading this), the previous Michelin-stared restaurants I had was like alright, I get it, nothing could really go wrong when the fresh, expensive ingredients are used.

However, this 7-courses worth every penny that I want to share with you guys! It was a pleasure meeting chef Jean-Georges in person, I finally understand what is required to get the 3-Michelin stars and his own food empire is not just culinary skill but his humble attitude to appreciate other cuisine then adapt the best element to his own creation. Let the journey begins!

1st Course – Egg Caviar

One of their signature appetizer. Loving the warm buttery textured egg york with the crispy brioche! Not to mention the freshness and saltiness of the caviar that makes the dish so flavourful and gives a different texture in a mouthful of the dish.

2nd Course – Crispy Salmon Sushi

Another signature appetizer. Chef Jean-Georges added lots of Asian cooking elements to his creations so this one is a perfect fusion dish from in and out. Sushi rice replaced with a fried rice cube and topped with soy glazed salmon sashimi and Chipotle Mayonnaise in between, basically a mouthful favor and texture explosion. It got the spirit of sushi itself with the salmon, soy, and rice as well as a bit of western twist when the crispiness of the rice cube with the mayo sauce reminds me of a mouth of fish and chip.

3rd Course – Yellowfin Tuna Tartare

As long as the ingredient is fresh, nothing can go wrong for any kind of tartare. The dressing gave an Asian touch to the dish when the Ginger Marinade reminds me of the XiaoLongBao dip with ginger and vinegar and drops of chili oil are no stranger in Chinese dishes, that gave a bit excitement in the healthy dish.

4th Course – Main: Black Truffle and Fontina Cheese Pizza

Just like what it sounds! Simple and tasty.

5th Course – Main: Roasted Cod

Perfectly roasted fresh cod. NO MORE WORD NEEDED. The Thai inspired coconut broth is matching the fish so well.

6th and 7th – Desserts: Tartufo & Warm Chocolate Cake

The meal only completed with a dessert or TWO! I’m officially happy now. I’m very much looking forward to dessert since chef Georges is French. Try the refreshing cranberry sorbet and the best seller warm chocolate cake. No one can resist a good old lava cake with the homemade ice cream.
